Hi,

those vegs are also eaten in Spain. Eggplant is widely eaten. Not much cardos, except Navarra. But we can find them during the season in many traditional markets.

I have the feeling that Spanish markets are more forthcoming in terms of varieties - I often shop in Madrid when I happen to be in town, and I can find vegetables that are impossible to find in Portugal (“pochas” ❤️)

From my point of view the most exciting explanation of the season, time and place are the vegetable & fruit shops at traditional markets.

Lovely, I am definitely in love with Portuguese food. And I would never replace manteiga da vaca with olive oil (as much as I adore olive oil).

I would instead replace most of the ingredients with plant-based alternatives today because, differently from 1500, we can.

Especially dairy, which comes from cows that nowadays are kept unnaturally in a forced cycle of consecutive births and lactation. In 1500 the milk from caws was a small “surplus” taken away from the calf’s diet - a whole different story in terms of sustainability :)
