This week, I tasted for you Ambijus’ Clearly Confused, provided to me at home by AwesomeBeverage in Portugal.
Ambijus says that Clearly Confused has been carefully (and not at all confusedly) developed with six core ingredients consisting of ferments and botanical extracts (fermented apple juice, fir needles, elderflower, water root, juniper, and oak) in an attempt to bottle all the hues tastes and smells of a Nordic forest.
They say it is a beverage between an aromatic cider and an orange wine. According to them, it should be paired with cured food, game, mushrooms, roasted vegetables, creamy soups, cheeses, and salty snacks.
We paired it with the new sushi menu at Praia no Parque, with Chef Paulo Alves.
Ambijus also produce an interpretation of rich and spicy red “Real Fantasy” with the same philosophy of recreating the flavours of the Norwegian forests.
In this case, the core ingredients that give a very Pinot colour to the liquid are fermented tea (kombucha), elderberry, raspberry, wild blueberries, roasted oakwood, and black peppercorn).
I did not try it this time, but I am eager to do so.
